My grandma taught me how to make this cake & Im sure once you try it, you will do it more than once!! It goes perfectly with the Cream Cheese Frosting
NOTE: You can also add pecans.
Ingredients:
- 2 cups allpurpose flour
- 2 cups granulated sugar
- 1 tsp bakngpowder
- 1 tsp baking soda
- 1 tsp powdered cinnamon
- 3 cups finely shredded carrots
- 1 cup oil
- 4 eggs
- Mix all dry ingredients (flour, baking powder, baking soda, cinnamon, &sugar).
- Beat the carrots with the oil and eggs at medium speed until fluffy.
- Then little by little add the dry ingredients to the mixture, and keep beating until everything is smooth.
- Bake at 350F. 25 min for cupcakes, and 40 min for cake.
